Ingredients
  

For the Green Goddess Spread
  • 1 medium avocado ripe
  • 1 cup fresh parsley packed
  • 1/4 cup fresh basil packed
  • 1 tablespoon lemon juice
  • 1 clove garlic minced
  • 1/4 teaspoon salt
For the Grilled Cheese
  • 4 slices whole grain bread
  • 1 tablespoon olive oil for grilling
  • 1/2 cup dairy-free cheese shredded

Method
 

Prepare the Green Goddess Spread
  1. In a bowl, mash the avocado until smooth.
  2. Add parsley, basil, lemon juice, minced garlic, and salt. Mix until well combined.
Assemble the Grilled Cheese
  1. Spread a generous amount of the Green Goddess Spread on two slices of bread.
  2. Top with shredded dairy-free cheese, then place the remaining slices of bread on top.
Grill the Sandwiches
  1. Heat olive oil in a skillet over medium heat.
  2. Once hot, place the sandwiches in the skillet and grill for 3-4 minutes on each side, or until golden brown and the cheese has melted.

  1. Remove from skillet and let cool for a minute before slicing in half.
