Prepare the Filling
- In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until softened.
- Add minced garlic, diced carrots, and ground turkey. Cook until the turkey is browned, about 5-7 minutes.
- Stir in peas, corn, chicken broth, Worcestershire sauce, thyme, salt, and pepper. Simmer for 10 minutes until slightly thickened.
Make the Mashed Potatoes
- While the filling simmers, boil the cubed potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy.
Assemble the Shepherd's Pie
- Preheat the oven to 400°F (200°C).
- Spread the turkey filling evenly into a large baking dish.
- Top with the mashed potatoes, spreading them evenly over the filling.
Bake
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the filling is bubbling.
- Let it cool for a few minutes before serving.
