Ingredients
  

For the Sauce
  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 can crushed tomatoes 28 oz
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Tortellini
  • 12 ounces fresh tortellini cheese-filled
  • 1 cup parmesan cheese grated

Method
 

Prepare the Sauce
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  4. Pour in the crushed tomatoes, and add the dried basil, oregano, salt, and black pepper.
  5. Simmer the sauce for 10 minutes, stirring occasionally.
Cook the Tortellini
  1. While the sauce is simmering, bring a large pot of salted water to a boil.
  2. Add the tortellini and cook according to package instructions until al dente, about 3-5 minutes.
  3. Drain the tortellini and set aside.
Combine and Serve
  1. Add the drained tortellini to the sauce, stirring gently to combine.
  2. Serve hot, topped with grated parmesan cheese.
