Ingredients
  

For the Pasta
  • 12 ounces spaghetti
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 pound shrimp peeled and deveined
  • 1 teaspoon red pepper flakes optional
For the Sauce
  • 1 can diced tomatoes 14.5 ounces
  • 2 cups fresh spinach
  • 1 teaspoon basil dried
  • 1 teaspoon oregano dried
  • Salt to taste salt
  • Pepper to taste black pepper
For Garnish
  • 1/4 cup parmesan cheese grated
  • 2 tablespoons fresh parsley chopped

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. Drain the pasta and set aside, reserving 1/2 cup of the pasta water.
Preparing the Sauce
  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink.
  3. Stir in the diced tomatoes, basil, oregano, red pepper flakes, salt, and pepper. Simmer for about 5 minutes.
Combining Ingredients
  1. Add the fresh spinach to the sauce and cook until wilted, about 2 minutes.
  2. Combine the cooked spaghetti with the sauce, adding reserved pasta water as needed to reach desired consistency.
Serving
  1. Serve the pasta in bowls, garnished with grated parmesan cheese and chopped parsley.
