Ingredients
  

For the Base
  • 2 tablespoons olive oil for sautéing
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 cups fresh tomatoes chopped
  • 1 cup vegetable broth
  • 1 teaspoon sugar to balance acidity
  • 1 teaspoon dried basil
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
For the Cream Finish
  • 1/2 cup heavy cream for richness
For Garnish
  • 2 tablespoons fresh basil chopped

Method
 

Preparing the Base
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Add the chopped tomatoes, vegetable broth, sugar, dried basil, salt, and black pepper.
  5. Bring the mixture to a boil, then reduce heat and let it simmer for 20-25 minutes.
Blending and Finishing
  1. Using an immersion blender, blend the soup until smooth. Alternatively, transfer to a blender in batches.
  2. Return the blended soup to the pot and stir in the heavy cream.
  3. Heat the bisque gently over low heat until warmed through, about 5 minutes.
  4. Taste and adjust seasoning if necessary.
Serving
  1. Ladle the bisque into bowls and garnish with chopped fresh basil.
  2. Serve hot with crusty bread or croutons.

Notes
