Ingredients
  

For the Base
  • 2 cups sweet potatoes cooked and mashed
  • 1/2 cup milk whole or evaporated
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 3 large eggs separated
For the Topping
  • 1/2 cup marshmallows miniature, optional

Method
 

Prepare the Base
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the mashed sweet potatoes, milk, brown sugar, vanilla extract, ground cinnamon, nutmeg, and salt.
  3. Mix until smooth and well combined.
  4. In a separate bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the beaten egg whites into the sweet potato mixture until just combined.
Bake the Soufflé
  1. Pour the sweet potato mixture into a greased soufflé dish.
  2. If using, sprinkle miniature marshmallows on top.
  3. Bake in the preheated oven for 30-35 minutes or until the soufflé is puffed and set.
  4. Remove from the oven and let it cool for a few minutes before serving.
