Method
Prepare the Base
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the sliced sweet potatoes, cranberries, heavy cream, salt, black pepper, and cinnamon. Mix until well combined.
- Transfer the sweet potato mixture into a greased 9x13 inch baking dish, spreading it evenly.
Make the Topping
- In a separate bowl, mix the panko breadcrumbs, grated Parmesan cheese, melted butter, and chopped thyme.
- Sprinkle the breadcrumb mixture evenly over the sweet potato layer in the baking dish.
Bake the Gratin
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and continue baking for an additional 15 minutes, or until the topping is golden brown and the sweet potatoes are tender.
Serve
- Remove from the oven and let it cool for about 5 minutes before serving.
- Garnish with additional thyme if desired and serve warm.
