Ingredients
  

For the Base
  • 8 ounces rice noodles dry
  • 2 tablespoons vegetable oil for frying
For the Sauce
  • 1/4 cup soy sauce
  • 1/4 cup sweet chili sauce
  • 1 tablespoon rice vinegar
For the Vegetables
  • 1 cup bell pepper sliced
  • 1 cup broccoli florets
  • 1 cup carrots julienned
  • 2 cloves garlic minced
  • 1 inch ginger grated
For Garnish
  • 1 tablespoon sesame seeds toasted

Method
 

Prepare the Noodles
  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat the vegetable oil over medium-high heat.
Stir Fry the Vegetables
  1. Add the garlic and ginger to the skillet, sauté for 30 seconds until fragrant.
  2. Add the bell pepper, broccoli, and carrots. Stir fry for about 5-7 minutes until the vegetables are tender-crisp.
Combine Noodles and Sauce
  1. Add the cooked noodles to the skillet with the vegetables.
  2. In a small bowl, mix together the soy sauce, sweet chili sauce, and rice vinegar.
  3. Pour the sauce over the noodles and vegetables, tossing to combine. Cook for an additional 2-3 minutes until heated through.
Serve
  1. Remove from heat and transfer the stir fry to serving dishes.
  2. Garnish with sesame seeds and sliced green onions before serving.

Notes
