Ingredients
  

For the Base
  • 250 grams halloumi cheese cut into thick slices
  • 2 cups zucchini sliced into rounds
  • 1 cup bell pepper cut into strips
  • 1 cup red onion cut into wedges
For the Seasoning
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Oven and Ingredients
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the zucchini, bell pepper, and red onion. Drizzle with olive oil, then sprinkle with oregano, garlic powder, salt, and black pepper. Toss well to coat the vegetables evenly.
Arrange on Sheet Pan
  1. Spread the seasoned vegetables in an even layer on a large sheet pan.
  2. Place the halloumi slices on top of the vegetables.
Roasting
  1. Roast in the preheated oven for about 25 minutes, or until the halloumi is golden brown and the vegetables are tender, stirring halfway through.
Serve
  1. Remove from the oven and let cool for a few minutes before serving.
  2. Serve warm, garnished with fresh herbs if desired.
