Method
Prepare the Lamb Chops
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, salt, black pepper, and crushed garlic. Rub this mixture over the lamb chops.
- Place the lamb chops on a baking sheet and let them marinate for at least 10 minutes.
Roast the Lamb Chops

Make the Mint Pesto
- In a food processor, combine fresh mint leaves, parmesan cheese, toasted pine nuts, salt, and lemon juice.
- While the processor is running, slowly drizzle in olive oil until the pesto reaches a smooth consistency.
- Taste and adjust seasoning if necessary.
Serve
- Plate the roasted lamb chops and generously spoon the mint pesto over the top.
- Serve with your choice of sides, such as roasted vegetables or a fresh salad.
