Ingredients
  

For the Chicken
  • 4 pieces chicken thighs bone-in, skin-on
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning store-bought or homemade
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon fresh parsley for garnish
For the Sides (Optional)
  • 2 cups mixed vegetables such as bell peppers, zucchini, and onions
  • 1 cup rice to serve alongside

Method
 

Prepare the Chicken
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the olive oil, Cajun seasoning, garlic powder, paprika, black pepper, and salt.
  3. Add the chicken thighs to the bowl and toss until they are well-coated with the spice mixture.
Roast the Chicken
  1. Place the seasoned chicken thighs skin-side up on a baking sheet lined with parchment paper.
  2. Roast in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
Prepare the Sides
  1. While the chicken is roasting, prepare the mixed vegetables by tossing them in olive oil, salt, and pepper.
  2. Spread the vegetables on a separate baking sheet and roast in the oven for the last 20 minutes of the chicken's cooking time.
  3. Cook the rice according to package instructions.
Serve
  1. Once the chicken is cooked, remove it from the oven and let it rest for 5 minutes.
  2. Serve the chicken with the roasted vegetables and rice, garnished with fresh parsley.
