Ingredients
  

For the Zucchini Fries
  • 3 medium zucchini cut into fries
  • 1 cup all-purpose flour for dredging
  • 2 large eggs beaten
  • 1 cup breadcrumbs preferably panko
  • 1 cup Parmesan cheese grated
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Dipping Sauce
  • 1 cup Greek yogurt or sour cream
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dill fresh or dried
  • 1/2 teaspoon salt

Method
 

Prepare the Zucchini Fries
  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Set up a breading station: place flour in one bowl, beaten eggs in another, and mix breadcrumbs, Parmesan, garlic powder, salt, and pepper in a third bowl.
  3. Dip each zucchini fry first in flour, then in the beaten eggs, and finally coat with the breadcrumb mixture.
  4. Place the coated zucchini fries on the prepared baking sheet in a single layer.
Bake the Fries
  1. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  2. While the fries are baking, prepare the dipping sauce by mixing Greek yogurt, lemon juice, dill, and salt in a small bowl.
Serve
  1. Once the fries are done baking, remove them from the oven and let them cool slightly.
  2. Serve warm with the dipping sauce on the side.

Notes
