One-Pot Creamy Turkey And Wild Rice Soup

Ingredients
  

For the Base
  • 1 pound ground turkey
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 1 cup wild rice rinsed
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme dried
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Topping
  • 1/4 cup fresh parsley chopped

Method
 

Cook the Turkey and Vegetables
  1. In a large pot over medium heat, brown the ground turkey until fully cooked, about 5-7 minutes.
  2. Add the diced carrots, celery, onion, and minced garlic; sauté for another 5 minutes until the vegetables begin to soften.
Add Rice and Broth
  1. Stir in the rinsed wild rice, chicken broth, thyme, salt, and black pepper.
  2. Bring the mixture to a boil, then reduce heat to low and cover the pot.
Simmer
  1. Let the soup simmer for about 30 minutes, or until the rice is tender.
Add Cream
  1. Once the rice is cooked, stir in the heavy cream and heat through for an additional 5 minutes.
Serve
  1. Ladle the soup into bowls and sprinkle with chopped parsley before serving.
