Method
Prepare the Chicken
- Preheat your oven to 375°F (190°C).
- In a bowl, mix cumin, paprika, and salt. Rub this mixture on both sides of the chicken breasts.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear for 4-5 minutes on each side until golden brown.
- Remove the skillet from heat and set aside.
Make the Cheese Sauce
- In a saucepan over medium heat, combine heavy cream, salsa, and garlic powder.
- Stir continuously until the mixture is heated through, then gradually add the shredded cheddar cheese, stirring until melted and smooth.
Combine and Bake
- Pour the cheese sauce evenly over the seared chicken breasts in the skillet.
- Transfer the skillet to the preheated oven and bake for 20 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C).
Serve
- Remove the skillet from the oven and let it rest for a few minutes.
- Garnish with chopped cilantro and serve with lime wedges on the side.
