Ingredients
  

For the Base
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 3 carrots carrots sliced
  • 2 celery stalks celery sliced
  • 6 cups vegetable broth
  • 1 can chickpeas drained and rinsed
  • 1 cup orzo pasta
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Garnish
  • 1/4 cup fresh parsley chopped
  • 1 lemon lemon juiced and zested

Method
 

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, sliced carrots, and celery. Cook for an additional 3-4 minutes until the vegetables begin to soften.
  3. Pour in the vegetable broth and bring the mixture to a boil.
  4. Once boiling, add the drained chickpeas, orzo pasta, dried thyme, salt, and black pepper. Reduce heat to a simmer.
  5. Cook for about 10-12 minutes, or until the orzo is al dente.
  6. Stir in the lemon juice and zest, and adjust seasoning if necessary.
  7. Serve hot, garnished with chopped parsley.

Notes
