Lemon Asparagus Pasta

A light and refreshing pasta dish featuring tender asparagus and a zesty lemon sauce, perfect for springtime meals.

Ingredients
  

For the Pasta
  • 12 ounces spaghetti
  • 1 bunch asparagus trimmed and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 lemon juice
  • 1 teaspoon lemon zest
For the Garnish
  • 1/4 cup parmesan cheese grated
  • 2 tablespoons fresh parsley chopped

Method
 

Cook the Pasta
  1. In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest.
  2. Return the drained pasta to the pot and set aside.
Prepare the Asparagus
  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  2. Add the asparagus pieces and cook for about 5-7 minutes, until tender but still crisp.
Combine Ingredients
  1. Add the cooked spaghetti to the skillet with the asparagus.
  2. Pour in the lemon juice and lemon zest, and toss everything together. If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.
Serve
  1. Remove from heat and stir in the grated parmesan cheese and chopped parsley.
  2. Serve immediately, garnished with additional parmesan and parsley if desired.

Notes

For an added kick, sprinkle some red pepper flakes before serving. You can also substitute the spaghetti for any pasta of your choice.
