Ingredients
  

For the Base
  • 2 cups cooked rice
  • 1 tablespoon olive oil
For the Chicken
  • 1 pound boneless chicken breasts cut into bite-sized pieces
  • 3 tablespoons honey
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon salt
For the Toppings
  • 1 cup cherry tomatoes halved
  • 1 cup corn canned or frozen
  • 1 cup avocado sliced
  • 1/4 cup cilantro chopped

Method
 

Prepare the Chicken
  1. In a bowl, combine honey, lime juice, chili powder, and salt to create a marinade.
  2. Add the chicken pieces to the marinade and let sit for at least 15 minutes.
Cook the Chicken
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the marinated chicken and cook for about 7-10 minutes, stirring occasionally, until fully cooked and golden brown.
Assemble the Bowls
  1. Divide the cooked rice among four bowls.
  2. Top each bowl with the cooked chicken, cherry tomatoes, corn, avocado, and cilantro.
Serve
  1. Drizzle any remaining marinade over the bowls for extra flavor.
  2. Serve immediately and enjoy!
