Ingredients
  

For the Base
  • 6 large eggs
  • 2 cups baby potatoes sliced thin
  • 1 cup milk whole or 2%
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For the Topping
  • 6 slices bacon cooked and crumbled
  • 1 cup shredded cheese cheddar or your preference
  • 1 tablespoon chives chopped, for garnish

Method
 

Prepare the Ingredients
  1. Preheat the oven to 375°F (190°C).
  2. Cook the bacon in a skillet until crispy, then crumble and set aside.
  3. In the same skillet, add the sliced baby potatoes and cook until tender, about 10 minutes.
Combine Egg Mixture
  1. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  2. Stir in the cooked potatoes and crumbled bacon.
Cook the Frittata
  1. Pour the egg mixture back into the skillet over medium heat.
  2. Cook for about 5 minutes, without stirring, until the edges start to set.
Bake
  1. Sprinkle the shredded cheese on top of the frittata.
  2. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the center is set.
Serve
  1. Remove the frittata from the oven and let it cool for a few minutes.
  2. Garnish with chopped chives and slice into wedges to serve.
