Method
Cooking the Chicken
- Season the chicken breasts with salt and black pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes per side, or until fully cooked and golden brown. Remove the chicken from the skillet and set aside.
Making the Sauce
- In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and cook for about 1 minute until fragrant.
- Add the sliced mushrooms to the skillet and sauté for about 5-6 minutes until they are tender and browned.
- Pour in the chicken broth and let it simmer for 2-3 minutes until slightly reduced.
Combining
- Return the cooked chicken breasts to the skillet and spoon the sauce over them. Let it cook for an additional 2 minutes to warm the chicken through.
- Garnish with chopped fresh parsley before serving.
