Ingredients
  

For the Base
  • 1 pound ground beef can substitute with turkey or plant-based ground meat
  • 4 cups green cabbage shredded
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup bell pepper chopped
  • 1 packet taco seasoning or homemade taco spice mix
For the Topping
  • 2 cups Fritos corn chips crushed slightly
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream optional for serving
  • 1/4 cup green onions sliced, for garnish

Method
 

Cook the Base
  1. In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat if necessary.
  2. Add the chopped onion, garlic, and bell pepper to the skillet. Sauté for another 5 minutes until the vegetables are softened.
  3. Stir in the shredded cabbage and taco seasoning. Cook for an additional 10-15 minutes, stirring occasionally, until the cabbage is tender.
Assemble the Dish
  1. Once the cabbage is cooked, remove the skillet from heat. Sprinkle the shredded cheese over the top.
  2. Cover the skillet for a few minutes to allow the cheese to melt.
  3. Serve the cowboy cabbage in bowls, topped with crushed Fritos, a dollop of sour cream, and sliced green onions.
