Ingredients
  

For the Base
  • 4 large whole wheat tortillas
  • 8 ounces cream cheese softened
  • 1 tablespoon ranch seasoning mix
For the Filling
  • 1 cup bell peppers finely chopped
  • 1 cup cucumbers finely chopped
  • 1 cup carrots grated
  • 1 cup spinach leaves chopped

Method
 

Prepare the Spread
  1. In a medium bowl, combine the softened cream cheese and ranch seasoning mix. Mix until well blended.
  2. Spread the cream cheese mixture evenly over each tortilla, leaving a small border around the edges.
Add the Fillings
  1. Evenly distribute the chopped bell peppers, cucumbers, grated carrots, and chopped spinach over the cream cheese layer on each tortilla.
  2. Press down gently to ensure the vegetables adhere to the cream cheese.
Roll and Slice
  1. Starting from one end, tightly roll each tortilla up, making sure to keep the filling inside.
  2. Once rolled, slice each tortilla into 1-inch pieces using a sharp knife.
Serve
  1. Arrange the sliced roll ups on a serving platter.
  2. Serve immediately, or cover and refrigerate until ready to serve.
