Easy Sweet Potato Pie Bars

Ingredients
  

For the Base
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter softened
  • 1/4 cup brown sugar
  • 1/4 teaspoon salt
For the Filling
  • 2 cups cooked sweet potatoes mashed
  • 1 cup sweetened condensed milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
For the Topping
  • 1/2 cup whipped cream for serving

Method
 

Prepare the Base
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, softened butter, brown sugar, and salt. Mix until crumbly.
  3. Press the mixture evenly into the bottom of a greased 9x13 inch baking dish.
  4. Bake in the preheated oven for 15 minutes.
Make the Filling
  1. In a large bowl, mix the mashed sweet potatoes, sweetened condensed milk, eggs, vanilla extract, cinnamon, nutmeg, and ginger until smooth.
  2. Pour the filling over the baked crust and spread evenly.
Bake and Cool
  1. Return the dish to the oven and bake for an additional 30 minutes, or until the filling is set.
  2. Remove from the oven and allow to cool completely in the dish.
Serve
  1. Cut into bars and serve with a dollop of whipped cream on top.

Notes
