Ingredients
  

For the Base
  • 2 cups cottage cheese drained
  • 1 cup shredded cheddar cheese or any cheese of choice
  • 1 cup almond flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Topping
  • 1 cup diced bell peppers for added flavor and color
  • 1 tablespoon olive oil for drizzling
  • 1 teaspoon paprika optional, for spice

Method
 

Prepare the Base
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the cottage cheese, shredded cheddar cheese, almond flour, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
Form the Chips
  1. Line a baking sheet with parchment paper.
  2. Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet, flattening them into thin rounds.
Bake the Chips
  1. Drizzle the olive oil over the tops of the chips, and sprinkle with paprika if using.
  2. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and crispy.
Add the Topping
  1. Remove the chips from the oven and immediately sprinkle with the diced bell peppers.
  2. Allow to cool for a few minutes before serving.
