Ingredients
  

For the Tilapia
  • 4 filets tilapia
  • 1 cup panko breadcrumbs
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh basil chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil for drizzling
For Serving
  • 1 lemon lemon sliced
  • 2 cups mixed greens

Method
 

Prepare the Herb Crust
  1. Preheat the oven to 400°F (200°C).
  2. In a medium bowl, combine panko breadcrumbs, parsley, basil, garlic powder, onion powder, salt, and black pepper.
  3. Mix the ingredients until well combined.
Prepare the Tilapia
  1. Place the tilapia fillets on a baking sheet lined with parchment paper.
  2. Drizzle olive oil over the fillets to help the crust adhere.
  3. Evenly distribute the herb breadcrumb mixture over each fillet, pressing gently to adhere.
Bake the Tilapia
  1. Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and the crust is golden brown.
  2. The internal temperature of the fish should reach 145°F (63°C).
Prepare for Serving
  1. While the tilapia is baking, prepare the mixed greens and slice the lemon.
  2. Arrange the mixed greens on plates as a bed for the tilapia.
Serve
  1. Once cooked, remove the tilapia from the oven and let it rest for a few minutes.
  2. Serve the crispy herb crusted tilapia on top of the mixed greens with lemon slices on the side.
