Ingredients
  

For the Pasta
  • 12 ounces fettuccine pasta
  • 1 tablespoon salt for boiling water
For the Sauce
  • 1 pound large shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon paprika
  • 1 cup parmesan cheese grated
  • 1 tablespoon fresh parsley chopped for garnish

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente, about 10-12 minutes.
  2. Drain the pasta and set aside, reserving a cup of the pasta water.
Make the Sauce
  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Stir in the shrimp, Cajun seasoning, and paprika. Cook for about 5-6 minutes until the shrimp turn pink and are cooked through.
  4. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer and let it cook for 2-3 minutes until slightly thickened.
  5. Add the cooked pasta to the sauce, tossing to combine. If the sauce is too thick, add some reserved pasta water to reach desired consistency.
  6. Stir in the grated parmesan cheese until melted and creamy.
Serve
  1. Plate the creamy Cajun shrimp pasta and garnish with chopped parsley.
  2. Serve immediately and enjoy your meal!
