Make the Cinnamon Roll Cookies
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture until just combined.
Prepare the Filling and Bake
- In a small bowl, mix the brown sugar and cinnamon to create the filling.
- Roll out the cookie dough on a floured surface into a rectangle, about 1/4 inch thick.
- Spread the cinnamon filling evenly over the dough and roll it up tightly into a log.
- Slice the log into 1-inch pieces and place them on the prepared baking sheet.
- Bake in the preheated oven for 10-12 minutes, or until golden brown. Allow to cool completely.
Assemble the Ice Cream Sandwiches
- Once the cookies are cooled, take a generous scoop of vanilla ice cream and place it between two cookies.
- Press gently to create a sandwich and repeat with remaining cookies and ice cream.
- For best results, freeze the assembled sandwiches for about 30 minutes before serving.
