Ingredients
  

For the Base
  • 2 cups shredded cooked chicken
  • 1 can enchilada sauce 15 oz
  • 1 cup black beans rinsed and drained
  • 2 cups tortilla chips lightly crushed
For the Topping
  • 1 cup shredded cheese Mexican blend
  • 1 cup sour cream for serving
  • 1 cup chopped fresh cilantro for garnish

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine shredded chicken, enchilada sauce, and black beans until well mixed.
Assembly
  1. In a greased 9x13 inch baking dish, spread half of the crushed tortilla chips evenly on the bottom.
  2. Layer half of the chicken mixture over the tortilla chips.
  3. Sprinkle half of the shredded cheese over the chicken mixture.
  4. Repeat the layers with the remaining tortilla chips, chicken mixture, and cheese.
Baking
  1. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Serving
  1. Remove from the oven and let it cool for 5 minutes.
  2. Serve warm, topped with sour cream and fresh cilantro.

Notes
