For the Base
  • 2 cups zucchini sliced
  • 1 pound chicken breast cubed
  • 1 cup long-grain rice uncooked
  • 2 cups chicken broth
For the Topping
  • 1 cup shredded cheddar cheese
For Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cubed chicken, sliced zucchini, uncooked rice, chicken broth, and all seasoning ingredients. Mix well.
Cooking
  1. Transfer the mixture into a greased 9x13 inch baking dish, spreading it evenly.
  2. Cover the baking dish tightly with aluminum foil.
  3. Bake in the preheated oven for 30 minutes.
  4. After 30 minutes, remove the foil and stir the mixture gently.
  5. Sprinkle shredded cheddar cheese evenly over the top.
  6. Return to the oven and bake uncovered for an additional 15 minutes, or until the cheese is melted and bubbly.
Serving
  1. Remove the bake from the oven and let it sit for 5 minutes before serving.
  2. Spoon into bowls and enjoy your cheesy zucchini chicken and rice bake!
