For the Base
  • 1 loaf day-old bread cut into cubes
  • 2 tablespoons olive oil for sautéing
  • 2 cups vegetable broth low-sodium if preferred
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Vegetables
  • 2 medium yellow onions sliced
  • 1 medium fennel bulb sliced
  • 2 cloves garlic minced
For the Garnish
  • 1/4 cup fresh parsley chopped

Method
 

Prepare the Vegetables
  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced onions and fennel, cooking until softened and caramelized, about 15-20 minutes.
  3. Stir in minced garlic and cook for an additional 2 minutes until fragrant.
Combine the Stuffing
  1. In a large mixing bowl, combine the bread cubes, cooked vegetable mixture, vegetable broth, thyme, salt, and pepper.
  2. Mix until the bread is well coated with the broth and vegetables.
Bake the Stuffing
  1. Preheat your oven to 350°F (175°C).
  2. Transfer the stuffing mixture to a greased baking dish, spreading it evenly.
  3. Cover with foil and bake for 20 minutes.
  4. Remove foil and bake for an additional 10 minutes to allow the top to crisp up.
Garnish and Serve
  1. Remove the stuffing from the oven and let it cool slightly.
  2. Sprinkle chopped parsley over the top before serving.
