Method
Make the Cannoli Chips
- In a mixing bowl, combine flour, sugar, and cinnamon. Mix well.
- Add beaten egg and melted butter to the dry ingredients, and mix until a dough forms.
- Roll the dough out on a floured surface until thin, about 1/8 inch thick.
- Cut the dough into desired chip shapes and set aside.
- Heat vegetable oil in a deep frying pan over medium heat.
- Fry the chips in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.
Prepare the Ricotta Dip
- In a bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth.
- Fold in mini chocolate chips gently.
Assemble the Platter
- Arrange the cannoli chips on a serving platter.
- Serve the ricotta dip in a bowl in the center of the platter.
- Optionally, sprinkle some extra chocolate chips on top of the dip for garnish.
