Ingredients
  

For the Base
  • 2 cups white rice uncooked
  • 4 cups vegetable broth for cooking rice
  • 2 cups broccoli florets fresh
For the Topping
  • 1 cup cheddar cheese shredded
  • 1 tablespoon olive oil for drizzling
  • 1 teaspoon garlic powder
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Rice
  1. Rinse the uncooked rice under cold water until the water runs clear.
  2. In a medium pot, combine the rinsed rice and vegetable broth. Bring to a boil.
  3. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
Cook the Broccoli
  1. While the rice is cooking, bring a small pot of water to a boil.
  2. Add the broccoli florets and blanch for 2-3 minutes until bright green and tender-crisp.
  3. Drain the broccoli and set aside.
Combine and Serve
  1. Once the rice is cooked, fluff it with a fork and stir in the blanched broccoli.
  2. Add garlic powder, salt, and black pepper to the rice and broccoli mixture, and mix well.
  3. Divide the rice and broccoli mixture into bowls, and top each with shredded cheddar cheese.
  4. Drizzle with olive oil and serve hot.
