Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, combine wheat bran and buttermilk, and let it sit for about 10 minutes to soften the bran.
Mixing the Batter
- In another bowl, whisk together the flour, brown sugar, baking soda, and salt.
- Add the egg and vegetable oil to the bran mixture and whisk until combined.
- Gradually stir in the dry ingredients until just combined.
- Fold in the raisins and walnuts if using.
Baking
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
