  • 4 large eggs (room temperature)
  • 1/4 cup unsalted butter (melted)
  • 1/2 cup heavy cream (for ganache)
  • 1 cup semi-sweet chocolate (chopped)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, sugar, and salt until combined.
  3. In another bowl, beat eggs until frothy, then add melted butter and vanilla; mix until smooth.
  4. Gradually fold the dry ingredients into the egg mixture until just combined.
  5. Pour the batter into the prepared pan and spread evenly. Bake for 12–15 minutes or until it springs back when touched.
  6. Once baked, flip the cake onto a powdered sugar-dusted towel and roll it up tightly while still warm.
  7. For the ganache, heat heavy cream until simmering, pour over chopped chocolate, let sit for two minutes, then stir until smooth.
  8. Unroll the cooled cake gently, spread ganache over it, then roll it back up using the towel.
  9. Chill the Yule Log seam-side down on a platter for at least an hour before slicing.
