  • 1 cup heavy cream (cold)
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar (adjust to taste)
  • 2 tsp pure vanilla extract
  • 4 large eggs (room temperature)
  • Pinch of salt

Instructions

  1. Preheat the oven to 425°F (220°C). In a saucepan over medium heat, melt the butter in water. Stir in flour until the dough forms a ball.
  2. Remove from heat; cool slightly. Add eggs one at a time, mixing until smooth after each addition. Pipe small mounds onto parchment-lined baking sheets and bake for 20-25 minutes until golden brown.
  3. Cool puffs on wire racks. For the filling, cook cherries with sugar over low heat until soft; let cool. Whip cream until soft peaks form, then fold in vanilla and some cherry mixture.
  4. Cut puffs in half; fill with whipped cream and top with remaining cherries before replacing the top.
