  • 4 pieces plain matzo
  • 1 cup romaine lettuce, chopped
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup radishes, thinly sliced
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh mint leaves, chopped
  • 3 tbsp lemon juice (freshly squeezed)
  • 3 tbsp extra virgin olive oil
  • 2 tsp sumac
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Break matzo into bite-sized pieces and spread on a baking sheet. Drizzle with olive oil and sprinkle with salt. Bake for 10-12 minutes until golden and crunchy.
  2. While the matzo bakes, chop the romaine lettuce, cucumbers, radishes, and cherry tomatoes into uniform pieces.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, pepper, and sumac until well combined.
  4. In a large bowl, combine the chopped vegetables with parsley and mint. Add baked matzo croutons just before serving to maintain their crunch.
  5. Drizzle dressing over the salad just before serving and toss gently.
