  • 4 cups Romaine Lettuce, chopped
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Cucumber, diced
  • 1/2 cup Red Onion, thinly sliced
  • 1/2 cup Kalamata Olives, pitted
  • 1 cup Bell Peppers (assorted colors), diced
  • 3/4 cup Feta Cheese, crumbled
  • 1/4 cup Olive Oil
  • 2 tbsp Red Wine Vinegar
  • 1 tsp Italian Seasoning
  • Salt & Pepper to taste
  • 2 tbsp Fresh Basil, chopped
  • 2 tbsp Fresh Parsley, chopped

Instructions

  1. 1. Wash all vegetables thoroughly and chop romaine lettuce into bite-sized pieces.
  2. 2. Slice cherry tomatoes in half, dice cucumbers into small cubes, and thinly slice red onion.
  3. 3. Dice bell peppers into small squares.
  4. 4. In a large bowl, combine all diced veggies along with Kalamata olives and crumbled feta cheese.
  5. 5. In a separate bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper until emulsified.
  6. 6. Pour the dressing over the salad and toss gently to combine.
  7. 7. Sprinkle chopped basil and parsley on top and give it one last gentle toss before serving.
