Ingredients

Scale
  • 45 lbs boneless pork shoulder
  • 1/4 cup brown sugar
  • 2 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp cayenne pepper (optional)
  • 1/4 cup yellow mustard
  • 1/2 cup apple cider vinegar (preferably unfiltered)
  • BBQ sauce (to taste)
  • Liquid smoke (a few drops)

Instructions

  1. Prepare Your Pork Shoulder: Trim excess fat from the pork shoulder, leaving some for juiciness. Rinse under cold water and pat dry.
  2. Make the Rub: In a bowl, mix brown sugar, paprika, garlic powder, onion powder, salt, pepper, and cayenne until well combined.
  3. Apply Mustard and Rub: Spread yellow mustard over the pork and massage the spice rub evenly onto all sides.
  4. Cook Low and Slow: Place in a slow cooker or smoker set to 225°F (107°C). Cook for 8-10 hours until it reaches an internal temperature of 195°F (90°C).
  5. Shred and Serve: Allow resting for about 30 minutes before shredding with two forks. Mix in BBQ sauce to taste and serve.
