  • 2 tsp Cajun seasoning
  • 2 bay leaves
  • 4 cups low-sodium chicken broth
  • 1 cup long-grain white rice

Instructions

  1. Rinse the soaked red beans under cold water. Chop the onion, bell pepper, celery, garlic, and sausage into bite-sized pieces.
  2. In a large pot over medium heat, add a splash of oil. Sauté the onion, bell pepper, and celery for 5-7 minutes until soft.
  3. Stir in the minced garlic and sliced sausage; cook until the sausage is browned.
  4. Add soaked beans, Cajun seasoning, bay leaves, and chicken broth to the pot. Bring to a boil, then reduce to a simmer for approximately 1.5 hours.
  5. About 20 minutes before serving, cook rice according to package instructions.
