  • 4 large eggs
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh parsley or dill, chopped
  • 1 medium sweet onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
  3. In a skillet, heat olive oil over medium heat and sauté the onions and garlic until fragrant and translucent.
  4. In a mixing bowl, combine the grated zucchini, sautéed onions and garlic, eggs, feta cheese, fresh herbs, paprika, salt, and pepper. Mix well.
  5. Grease a baking dish with olive oil and pour in the mixture evenly.
  6. Bake for 30-35 minutes until golden brown on top.
  7. Let cool for 10 minutes before slicing into squares; serve warm or at room temperature.
