  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 2 tbsp mixed fresh herbs (rosemary, thyme, parsley)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp butter
  • 2 lbs russet or Yukon Gold potatoes, peeled and chopped
  • 1 lb baby carrots
  • 2 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Mince garlic and chop herbs.
  2. In a bowl, mix olive oil, garlic, herbs, salt, and pepper. Coat chicken breasts in the mixture.
  3. Place chicken in a baking dish and roast for 25-30 minutes until they reach an internal temperature of 165°F (75°C).
  4. Boil chopped potatoes in salted water for 15-20 minutes until fork-tender.
  5. In a saucepan over medium heat, cook baby carrots with honey and a splash of water for about 10-12 minutes until glazed.
  6. Drain potatoes, return them to the pot, add butter and milk; mash until smooth. Season with salt and pepper.
  7. Serve chicken alongside mashed potatoes and glazed carrots drizzled with remaining herb-infused olive oil.
