  • 1 cup red bell pepper, diced
  • 1 cup green bell pepper, diced
  • 1 cup frozen corn
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1/2 cup BBQ sauce
  • 4 cups low-sodium chicken broth
  • 1 tsp paprika
  • 1 tsp dried thyme

Instructions

  1. In a large pot over medium heat, add olive oil and sauté chopped onions until translucent (about 5 minutes).
  2. Add chicken breasts and minced garlic; cook until chicken is browned on all sides (approximately 7 minutes).
  3. Stir in diced bell peppers and frozen corn; allow to soften before adding canned tomatoes.
  4. Pour in chicken broth and BBQ sauce; bring to a simmer.
  5. Add paprika and thyme; cover and simmer on low heat for about 30 minutes.
  6. Shred the chicken directly in the pot using two forks; stir to combine before serving.
