  • 1 cup tri-color quinoa
  • 2 cups vegetable broth or water
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1 cup bell pepper (any color), diced
  • 3/4 cup crumbled feta cheese
  • 3 tbsp extra-virgin olive oil
  • Juice of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine rinsed quinoa with vegetable broth. Bring to a boil, reduce heat, cover, and simmer for 15 minutes until liquid is absorbed. Fluff with a fork.
  2. While quinoa cooks, chop cherry tomatoes, cucumber, red onion, bell pepper, and parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, pepper, and optional dried oregano.
  4. In a large bowl, mix cooked quinoa (cooled), chopped veggies, and feta cheese. Pour dressing over the salad and toss gently.
  5. Chill in the refrigerator for at least one hour before serving.
