- 1 zampone sausage (approximately 1 pound)
- 2 medium carrots, finely chopped
- 1 medium onion, diced
- 2–3 cloves garlic, minced
- 2 sprigs fresh rosemary, chopped
- 2 sprigs fresh thyme, chopped
- 4 cups low-sodium vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Rinse the lentils under cold water until clear to remove excess starch.
