  • 1 can (15 oz) black beans, rinsed

  • 8 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup enchilada sauce (store-bought or homemade)
  • 1/4 cup fresh cilantro, chopped
  • 2 tsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add olive oil and sauté the onion until translucent. Add chopped bell peppers and cook until softened.
  3. Stir in ground turkey and black beans; cook until the turkey is no longer pink.
  4. Pour half of the enchilada sauce into the mixture and simmer for about five minutes.
  5. Grease a baking dish and layer half of the turkey mixture, followed by tortillas, more sauce, and repeat layers ending with cheese on top.
  6. Cover with foil and bake for 25 minutes. Remove foil for the last 10 minutes to brown the cheese.
