  • 4 boneless, skinless chicken breasts (about 600g)
  • 4 garlic cloves, minced
  • 1 medium onion, finely chopped
  • 1 tablespoon fresh ginger, grated
  • 400g tinned tomatoes (whole or diced)
  • 200ml full-fat coconut cream
  • 2 teaspoons garam masala
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)
  • Juice of 1 lemon

Instructions

  1. Cut chicken breasts into bite-sized pieces. Set aside.
  2. In the Thermomix, sauté onion and garlic with ginger on Varoma temperature for about 5 minutes until fragrant.
  3. Add garam masala, cumin, turmeric, salt, and pepper. Sauté for another minute.
  4. Pour in tinned tomatoes and blend on speed 6 for 10 seconds until smooth.
  5. Add chicken pieces and cook at 100°C on reverse speed soft for 15 minutes until tender.
  6. Stir in coconut cream and cook for an additional 5 minutes at the same temperature.
  7. Serve hot over rice or with naan bread, garnished with cilantro and a squeeze of lemon juice.
