  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce (or soy sauce)

Instructions

  1. Rinse jasmine rice under cold water until clear. Combine with water in a pot, bring to boil, reduce heat to low, cover, and cook for 15 minutes.
  2. In a large pan over medium heat, add oil. Sauté your chosen protein until browned and cooked through.
  3. Add chopped vegetables to the pan and stir-fry for about 5 minutes until tender-crisp.
  4. In a bowl, mix coconut milk, red curry paste, and fish sauce. Pour into the pan with the protein and veggies.
  5. Simmer on low heat for an additional 5 minutes to meld flavors.
  6. Fluff rice with a fork, divide among bowls, and top generously with the protein-vegetable mix.
