  • 1 can (400ml) full-fat coconut milk
  • 1 cup fresh basil leaves
  • Juice of 1 lime
  • 1 cup bell peppers, chopped
  • 2 cups spinach
  • 1 tbsp fish sauce
  • 2 cups jasmine rice (for serving)

Instructions

  1. Prepare a steaming basket lined with parchment paper over a pot of simmering water.
  2. In a bowl, mix Thai green curry paste and coconut milk until smooth.
  3. Stir in chopped bell peppers and spinach until well combined.
  4. Place salmon fillets in the steamer, drizzle with fish sauce, and pour the curry mixture over.
  5. Cover and steam for 10-15 minutes or until salmon flakes easily with a fork.
