  • 3 garlic cloves, minced
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine quinoa, coconut milk, and water. Bring to a boil, then reduce heat and cover for 15 minutes until fluffy.
  2. Pat salmon fillets dry and season both sides with salt and pepper.
  3. In a bowl, mix sweet chili sauce, soy sauce, and honey.
  4. Heat oil in a skillet over medium-high heat. Sear salmon skin-side down for about 4 minutes until golden brown. Flip and pour the glaze over during the last minute of cooking.
