  • 1 cup low-sodium chicken broth
  • 4 tbsp butter, melted
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Rinse hens under cold water and pat dry; season inside with salt and pepper.
  2. In a skillet, melt butter over medium heat. Sauté onion and garlic until fragrant (about 5 minutes); set aside.
  3. Combine sautéed onion and garlic with bread crumbs, herbs, salt, pepper, and chicken broth in a bowl until moistened but not soggy.
  4. Stuff each hen with the mixture snugly and secure openings with toothpicks or kitchen twine.
  5. Place hens in a roasting pan breast-side up. Brush with melted butter and season again with salt and pepper. Roast for about 1 hour or until juices run clear when pierced at the thigh.
  6. Let rest for 10 minutes before serving to retain juices.
