  • 1 large green cabbage
  • 1 lb lean ground beef
  • 1 cup uncooked long-grain rice
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 14 oz diced tomatoes (canned)
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 24 oz tomato sauce
  • 2 tbsp lemon juice
  • 1 tsp sugar

Instructions

  1. Bring a large pot of salted water to boil. Remove the core from the cabbage and submerge it in boiling water for about 5 minutes until leaves soften. Set aside.
  2. In a skillet over medium heat, add olive oil and sauté the chopped onion until golden brown. Stir in minced garlic until fragrant.
  3. In a bowl, mix ground beef, rice, sautéed onions and garlic, diced tomatoes, parsley, salt, and pepper until well combined.
  4. Lay softened cabbage leaves flat and place about 2 tablespoons of filling at one end. Fold sides inward and roll tightly.
  5. Preheat oven to 350°F (175°C). Spread some tomato sauce on the bottom of a baking dish; place rolls seam-side down atop sauce.
  6. Cover with foil and bake for 1 hour. Remove foil during the last 15 minutes for browning.
